Make a Roux Already

The Heart of Cajun and Creole Cooking, One Post at a Time

Slide 1

A Substack about the soul of Cajun and Creole cooking—one roux at a time. This isn’t just a newsletter about food. It’s about how we cook, why we cook, and what a good roux can teach us about patience, transformation, and flavor that lasts. Written by David Benoît, a native of Cajun Country and the author of the upcoming book Roux the Day, this Substack digs deep into the techniques, traditions, and tales behind Louisiana’s most iconic dishes. Expect: • Roux-first recipes (yes, even salad dressings and desserts) • Field notes from the test kitchen • Myths busted • Reflections on culture, community, and cooking with care Whether you’re a beginner with a wooden spoon or a seasoned home cook, you’ll find something here worth stirring.
